Here’s a quick and easy recipe for delicious Madeleines, made with orange zest and rainbow sprinkles! This makes for a great quarantine activity with your kids. Madeleines are a traditional miniature cake, usually prepared in the morning, originating in Northern France.
We added a kid twist with orange zest (typically they are made with lemon zest) and rainbow sprinkles.
For this recipe you will need:
- Madeleine Molds
- 2 eggs
- 3/4 tsp vanilla extract
- a pinch of salt
- 1/3 cup sugar
- 1/2 cup all-purpose flour
- 1 tbsp orange zest
- 1/4 cup melted butter
- 1 tbsp rainbow sprinkles
Preheat your oven to 375°F. Beat the eggs, vanilla together until smooth. While beating, slowly mix in the sugar, then flour, then butter. Add the orange zest and rainbow sprinkles and mix until smooth, usually for a couple of minutes. Grease the Madeleine pan. Spoon the batter into the molds. You’ll only need to fill each mold about 3/4 full. Place in the oven and watch it closely. They can take anywhere from 4 to 10 minutes to finish baking depending on your oven format and the depth of the molds. You’ll know they’re done because the Madeleines will darken around the edges. Once you remove them from the oven, let them sit for a few minutes before attempting to remove each Madeleine from the pan. Right at the end, I like to sprinkle some powdered sugar over the top.
